  • 250g rolled oats
  • 200g mixed nuts, roughly chopped
  • 150g mixed seeds
  • 40g chia seeds
  • 10 dried apricots, chopped
  • 80g raisins
  • 150g Med Cuisine Silan Medjool Date Syrup
  • 50g olive oil
  • 2 tsp ground cinnamon
  • 2 tsp ground cardamom
  • A pinch of Maldon salt


  1. Preheat the Oven:

    • Heat your oven to 150°C (302°F).
  2. Mix Dry Ingredients:

    • In a large mixing bowl, combine the rolled oats, chopped nuts, mixed seeds, chia seeds, raisins, and chopped apricots.
  3. Prepare the Syrup Mixture:

    • In a small saucepan, combine the Med Cuisine Silan Medjool Date Syrup, olive oil, cinnamon, cardamom, and Maldon salt. Bring to a boil over medium heat, whisking constantly to ensure the ingredients emulsify.
  4. Combine Wet and Dry Ingredients:

    • Pour the hot syrup mixture over the dry ingredients in the bowl. Mix thoroughly to ensure all the dry ingredients are evenly coated.
  5. Bake the Granola:

    • Line a baking tray with parchment paper. Spread the granola mixture evenly across the tray.
    • Bake in the preheated oven for about 20 minutes. Open the oven every 5 minutes to stir the granola, ensuring it bakes evenly and prevents burning.
  6. Cool and Store:

    • Allow the granola to cool completely on the tray. Once cool, transfer it to an airtight container for storage.
  7. Serve:

    • Enjoy your homemade granola over yogurt, topped with your favorite fruits, and perhaps an extra drizzle of date syrup for added sweetness.
