The story of Freekeh dates back 2000 years to the hills of Galilee. To protect their crops from an imminent attack, villagers harvested their wheat while it was still green and hid it in a barn. When the barn caught fire during the attack, the villagers discovered that the roasted green wheat had developed a delicious smoky flavor. Named Freekeh, from the Arabic word “to rub,” this accidental discovery continues to delight palates to this day.

Cooking Instructions:
- Rinse 1 cup of Freekeh in cold water. Soak for 15 minutes (optional).
- In a medium saucepan, combine Freekeh and 2 cups of water or stock with a pinch of salt.
- Bring to a boil, then simmer on low heat, covered, for 20-25 minutes or until all water is absorbed (stir occasionally while simmering).
- Remove from heat and let stand for 5 minutes before serving.
