Ingredients:
- 2 cups cooked Fire Grain Freekeh
- 1/3 cup olive oil
- 200-250g spinach
- 5 garlic cloves, thinly sliced
- Salt, to taste
- Cracked black pepper, to taste
- Juice of 1 lemon
Optional Topping:
- Crème fraîche
- Freshly ground black pepper
Instructions:

Prepare the Freekeh:
- Cook the Freekeh according to the package instructions. Allow to cool slightly.

Prepare the Spinach:
- Wash the spinach thoroughly; there is no need to dry it.

Cook Garlic and Spinach:
- In a wide saucepan, heat the olive oil over medium heat. Add the sliced garlic and simmer gently until it is slightly golden.
- Add the spinach with its stalks to the pan. Cover and steam for a few minutes until the spinach has softened and released its liquid.

Combine with Freekeh:
- Stir in the cooked Freekeh, cover the pan, and cook together for 5-7 minutes, allowing the flavors to meld.

Season and Serve:
- Uncover the pot, stir the mixture, and season with salt and cracked black pepper to taste.
- Transfer to a serving plate and squeeze fresh lemon juice generously over the top.

- Serve with a dollop of crème fraîche and a sprinkle of freshly ground black pepper, if desired.
